Lunch in Bellingham: How Enterprising North helped bring new life to a village bakery

The challenge
When the previous bakery in Bellingham closed, Katie Summers saw an opportunity to bring new life to the space.
Despite no prior experience, she was determined to create a welcoming takeaway bakery that would serve both the local community and visitors.
But launching a business quickly in the run-up to the busy tourist season required practical support and guidance.
The solution
Through a family connection, Katie was introduced to Simon Laing, RDC’s Rural Start-up Advisor. His flexible approach made it possible for Katie to receive quick, targeted advice whilst working around her other commitments.
He helped her source equipment, build her online presence, and even provided guidance on staff contracts, directing her to free legal advice with the Federation of Small Businesses, which saved her significant costs.
The results
Lunch in Bellingham has become known by both locals and visitors for its friendly, personal service, and menu shaped by customer feedback.
Katie is now planning to expand offerings with giant cookies and pop-up pizza nights, as well as packed lunches and breakfast boxes for tourists. Inspired by her entrepreneurial journey, her 10-year-old son suggested a line of handmade dog biscuits, which are already a hit.
